It’s best to buy Zespri Green Kiwis when they are still firm, and then to leave the fruit to ripen for a while. The green kiwi keeps for longer in the fridge, and ripens rather more quickly at room temperature.

If you want to speed up the ripening process, put the kiwi in a bag with other fruit (see ‘How do I store a kiwi?’ and ‘Can I speed up the ripening process?’).

When is it really ripe? To find out, gently press the fruit. If it gives a little, it is ripe and at its best.
