Ingredients

  • 2 Zespri Green or Gold kiwifruit (or a combination)
  • 1 small tomato
  • 2 tablespoons thinly sliced spring onion (green onion/scallion)
  • 1 tablespoon chopped coriander (cilantro) or parsley
  • 1 teaspoon lemon juice
  • 1 cup corn (nacho) chips

Preparation

  • Peel the Zespri Green and/or Gold kiwifruit then dice it.
  • Halve the tomato and squeeze out the seeds. 
  • Then dice the flesh.
  • Combine the fruit with the tomato, spring onion, coriander or parsley and lemon juice. 
  • Store the salsa and corn chips in small containers suitable for the lunch box.
