For the pancakes:
- 4 eggs
- 200 ml milk, 200 ml water
- ½ tsp. salt
- 70 g rye flour
- 70 g wheat flour
- 1 bunch of chives
- 2 tbsp. edible oil
For the filling:
- 6 Zespri Green
- 1 yellow and 1 red paprika
- ½ bunch spring onions
- 200 g fresh soybean shoots
- 1 tbsp. sesame oil
- 1 tbsp. soy sauce
- Salt, pepper
- Curry powder

Preparation
- Beat the eggs, milk, water and salt, add the flour and stir thoroughly.
- Wash the chives, chop into little rolls and stir into the batter.
- Cook four pancakes in succession in hot oil and set aside to keep warm.
- Clean and halve the paprikas, clean the spring onions and wash all together with the soybean shoots.
- Cut the paprikas into thin strips and the spring onions into oblique rings.
- Sweat the prepared vegetables in the heated oil for about ten minutes and season with soy sauce, salt, pepper and curry powder.
- Peel, halve and slice the Zespri Green, add to the vegetables and briefly heat all together.
- Divide the prepared filling over the pancakes, fold them over and serve.
