Ingredients

For the pancakes:

  • 4 eggs 
  • 200 ml milk, 200 ml water
  • ½ tsp. salt
  • 70 g rye flour
  • 70 g wheat flour
  • 1 bunch of chives
  • 2 tbsp. edible oil

For the filling:

  • 6 Zespri Green
  • 1 yellow and 1 red paprika
  • ½ bunch spring onions
  • 200 g fresh soybean shoots
  • 1 tbsp. sesame oil
  • 1 tbsp. soy sauce
  • Salt, pepper
  • Curry powder 
Spicy pancakes filled with Zespri Green

Preparation

  • Beat the eggs, milk, water and salt, add the flour and stir thoroughly. 
  • Wash the chives, chop into little rolls and stir into the batter. 
  • Cook four pancakes in succession in hot oil and set aside to keep warm. 
  • Clean and halve the paprikas, clean the spring onions and wash all together with the soybean shoots. 
  • Cut the paprikas into thin strips and the spring onions into oblique rings. 
  • Sweat the prepared vegetables in the heated oil for about ten minutes and season with soy sauce, salt, pepper and curry powder. 
  • Peel, halve and slice the Zespri Green, add to the vegetables and briefly heat all together. 
  • Divide the prepared filling over the pancakes, fold them over and serve.
