- 3-4 Zespri Green Organic kiwifruit
- 125 g firm tofu
- 1 teaspoon ground cumin
- ½ teaspoon seasoned salt
- 2 cloves garlic, crushed
- 2 tablespoons (30 ml) olive oil
- 8 black olives, pitted
- 1 cup (60 g) toasted croûtons
Dressing: 1 tablespoon (15 ml) each: cider vinegar, olive oil
Light salad of Zespri Green, olives and tofu

Preparation
- Drain the tofu and cut in 2 cm cubes.
- Dust with the cumin and salt and dot with the garlic.
- Add the oil and mix well.
- Gently fry the tofu in the oil in a frying pan, until lightly coloured.
- Drain and cool.
- Peel and cube or slice the kiwifruit into a bowl.
- Add the tofu, olives and croûtons.
- Combine the dressing ingredients and sprinkle over the salad.
- Serve this delicious light meal with crusty bread. Cubed feta cheese could replace the tofu if desired.
