Ingredients

  • 3-4 Zespri Green Organic kiwifruit
  • 125 g firm tofu
  • 1 teaspoon ground cumin
  • ½ teaspoon seasoned salt
  • 2 cloves garlic, crushed
  • 2 tablespoons (30 ml) olive oil
  • 8 black olives, pitted
  • 1 cup (60 g) toasted croûtons

Dressing: 1 tablespoon (15 ml) each: cider vinegar, olive oil  

Light salad of Zespri Green, olives and tofu

Preparation

  • Drain the tofu and cut in 2 cm cubes. 
  • Dust with the cumin and salt and dot with the garlic. 
  • Add the oil and mix well.
  • Gently fry the tofu in the oil in a frying pan, until lightly coloured. 
  • Drain and cool.
  • Peel and cube or slice the kiwifruit into a bowl. 
  • Add the tofu, olives and croûtons.
  • Combine the dressing ingredients and sprinkle over the salad.
  • Serve this delicious light meal with crusty bread. Cubed feta cheese could replace the tofu if desired.
