Matcha chia pudding with Zespri Green kiwifruit

Ingredients Method

Ingredients

  • 4 Zespri Green kiwifruit
  • fresh mint leaves
  • 25 g chia seeds
  • 400 ml almond milk
  • 1 sprig fresh mint
  • 1 tablespoon matcha
  • 1 tablespoon honey, agave nectar or sweetener
  • 2 tablespoons chopped walnuts (40g)

Method

  1. Warm the almond milk with the mint leaves in a pot for a few moments then remove from the heat and leave to cool. Strain and mix the milk with the chia seeds, matcha and honey. Whisk and then pour into 4 glasses and leave in the refrigerator to cool for 1 hour or overnight to firm up. 
  1. Peel and dice the Zespri kiwifruit. Combine them with the chopped mint leaves and sprinkle over the chia pudding. Top with the walnuts.
