Pie-tini with banana and Zespri SunGold kiwifruit

Ingredients

  • 1 Zespri SunGold kiwifruit, peeled, chopped
  • 1 oz Cruzan, banana rum
  • 1 oz Barrenjager
  • 1 1/2 oz heavy cream
  • 1/2 oz liquor 43 

Method

  1. Muddle Zespri SunGold kiwifruit and Cruzan in shaker. Add Barrenjager and shake with ice. Strain into martini glass. 
  2. Place cream and Liquor 43 in shaker. Shake for 30 seconds until frothy.
  3. Place tsp against inside edge of martini glass. Slowly pour cream mixture over back of spoon onto kiwifruit mixture, creating layered effect. Serve immediately.
