Barley salad with arugula, Zespri kiwifruit and feta cheese

Ingredients

  • 100 g pearl barley
  • 100 g arugula
  • 100 g fresh cheese
  • 1 Zespri Green kiwifruit
  • 1 Zespri SunGold kiwifruit
  • 1 sprig of basil
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • pepper
  • salt

Method

  1. Put water in a saucepan, add some salt and boil the barley for 30 minutes. Drain in a colander and leave to cool.
  2. Place the barley on the bottom of a serving dish and arrange slices of Zespri kiwifruit around the edge. Top with the arugula and diced fresh cheese.
  3. Mix the olive oil with the lemon juice, adding a pinch of salt and pepper. Add the dressing to the salad and then sprinkle it with plenty of chopped basil. Serve.
