Barley salad with arugula, Zespri kiwifruit and feta cheese
Ideal for weight control diets, this healthy salad with its original contrast of colours is sure to seduce you! For a complete meal, accompany this salad with a protein dish. Are you ready to give it a try?
- Put water in a saucepan, add some salt and boil the barley for 30 minutes. Drain in a colander and leave to cool.
- Place the barley on the bottom of a serving dish and arrange slices of Zespri kiwifruit around the edge. Top with the arugula and diced fresh cheese.
- Mix the olive oil with the lemon juice, adding a pinch of salt and pepper. Add the dressing to the salad and then sprinkle it with plenty of chopped basil. Serve.
