Zespri Green kiwifruit salad with Italian ham and Cambozola

Ingredients Method


  • 4 Zespri Green kiwifruit, peeled and chopped into even-sized pieces
  • 200g rocket leaves, rinsed
  • 12 slices of Parma ham , cut into three pieces
  • A handful of walnut pieces
  • 150g Cambozola or Stilton
  • 12 small pieces of toast
  • 4 tbsps olive oil
  • 2 tbsps balsamic vinegar
  • Black pepper
  • Coarse salt


  1. Spread the toasts with Cambozola.
  2. Mix the rocket, ham, walnuts, Zespri Green kiwifruit, olive oil and balsamic vinegar. Season with salt and pepper.
  3. Arrange on four plates.
  4. Place the toasts in the salad and serve.
