Ingredients

  • 100 g spinach
  • 2 Zespri Green kiwifruit
  • 100 g cooked haricot beans
  • 1 avocado pear
  • 20 g raisins
  • 30 g walnuts
  • 4 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • pepper
  • low sodium salt

Method

  1. Mix the olive oil with the lemon juice, adding a pinch of salt and pepper. Peel and dice Zespri Green kiwifruit. Peel and slice the avocado.
  1. Place the spinach leaves on the bottom of a serving dish. Arrange the haricot beans, diced kiwifruit, slices of avocado, raisins and walnuts. Add the dressing and serve.
